My brain has somehow concocted a half-assed reason for Jean to actually be wearing a bridle, along the lines of him losing a bet with Eren and Armin having the skills and mad genius to use some old 3D maneuver equipment to help and Jean is not-completely-not-okay with being led around and having to carry Armin piggy-back around camp.
TL;DR I am a terrible person
