Hmm, I understand your confusion. This obviously is a very in-depth piece of art. Let’s try and break this down.
The mouse and cheese represent the Once-ler’s gluttony and greed. The fact that the Once-ler is turned away from the mouse symbolizes the fact that at this stage in the movie, he is not as affected by either character flaw.
But his head is now turned to face the mouse, and we can see that the Once-ler has noticed the small critter. He’s seen what he can become, and, judging by his facial expression, he isn’t taking this threat seriously. The Once-ler is immature and doesn’t realize the full risk of what he’s doing yet.
This piece of art is a beautiful character analysis of the Once-ler and his ways.
